
Appetizers
Apple are a very versatile fruit and can be used many different ways. Below are some scrumptious ways to enjoy them.

Apple Salsa

1 medium diced Crispin or Empire apple (or half of each variety)

2 large ripe tomatoes (1.5 cups), diced

1/3 cup diced red onion

1/2 cup diced red or green bell pepper

1 large jalapeno pepper, seeded, membranes removed and minced

2 tablespoons fresh squeezed lime juice

2 tablespoons fresh cilantro, minced
Combine all ingredients; add salt and pepper to taste. Mix well, cover and refrigerate for one hour. Remove from refrigerator and let warm to room temperature for 20 minutes. Serve with tortilla chips and apple slices.

Apple Dip

8 oz. cream cheese, softened

½ cup mayonnaise

2 medium apples, finely chopped

½ cup chopped walnuts
-
1 tablespoon lemon juice
Blend together cheese and mayonnaise. Add apples, nuts and lemon juice. Serve with crackers.

Apple Chips

5 teaspoons sugar
-
2 teaspoons cinnamon

1 apple
Combine sugar and cinnamon. Use a mandoline or handheld slicer to very thinly slice apple crosswise into rounds, removing seeds. Put on 2 parchment-lined baking sheets in a single layer. Then sprinkle with half the cinnamon-sugar. Flip apples and sprinkle with remaining mixture. Bake in a 275°F oven, flipping once, until just crisp, about 1 ½ hours.

Apple Cider
Sangria

3 apples cored and sliced

1 lemon, sliced
-
1 orange, sliced
-
2 cups apple cider
-
2 bottles ginger beer
-
1 bottle white wine
Fill large pitcher with sliced apples, lemons and oranges. Add apple cider, ginger beer and white wine.
Stir mixture then pour into serving glasses, add ice if you like.
